Ingredients

  • 6 cup water

  • 1 cup sugar

  • 3 cup sliced fresh strawberries

  • 1 ½ cup chopped fresh mint leaves

  • 8 - 9 lemons (1/2 tsp. zest, 1 1/2 to 1 3/4 cups juice)

  • Lemon slices

  • Ice cubes

Directions

  1. For simple syrup: In a large saucepan combine 3 cups of the water, the sliced strawberries, and sugar. Bring to boiling, stirring until sugar dissolves. Reduce heat; simmer 5 minutes. Remove from heat.

  2. Add chopped mint; cover and let steep 30 minutes.

  3. Using a fine-mesh strainer, strain syrup to remove mint and berries. Let cool.

  4. In a pitcher combine 3 cups cold water, the simple syrup, lemon zest, and lemon juice. Add lemon slices along with additional strawberry slices and mint leaves. Chill up to 4 hours before serving. Serves 8.

Test Kitchen Tip: For a sweeter, more kid-friendly version of this summertime sipper, you'll want to stick to the low end of the range (1 1/2 cups) of lemon juice.
