Hearts of Palm Cakes

This healthy vegan recipe will remind you of crab cakes, but there's no crab meat involved. Instead, make your cakes with hearts of palm, a starchy veggie with slightly nutty flavor that resembles crab meat once it's been shredded.

Ingredients

  • 1 14 ounce can sliced hearts of palm, drained

  • ½ of a 15-oz. can (3/4 cup) reduced-sodium chickpeas, rinsed and drained

  • 1 cup panko bread crumbs

  • ½ cup sliced green onions

  • ¼ cup chopped celery

  • 1 tablespoon flaxseed meal

  • 1 tablespoon salt-free Cajun seasoning

  • 1 tablespoon lemon juice

  • 1 teaspoon Creole mustard

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tablespoon vegetable oil

  • 1 5 ounce pkg. mixed spring salad greens

  • 1 recipe Remoulade Sauce

  • Lemon wedges (optional)

Remoulade Sauce

  • ½ 12 ounce pkg. silken soft tofu

  • 2 tablespoon vegan mayonnaise

  • 1 tablespoon sweet pickle relish

  • 1 tablespoon lemon juice

  • 1 teaspoon prepared horseradish

  • 1 teaspoon bottled hot pepper sauce

  • ¼ teaspoon smoked paprika

  • 1 clove garlic, peeled and halved

  • Salt and pepper

Directions

  1. In a food processor combine hearts of palm and chickpeas; cover and pulse until finely chopped. Add 1/2 cup of the bread crumbs and next eight ingredients (through pepper). Cover and process just until mixture holds together.

  2. Shape mixture into eight 1/2-inch-thick patties. Place remaining 1/2 cup bread crumbs in a shallow dish. Dip patties into bread crumbs, turning and pressing to coat.

  3. In a 12-inch skillet heat oil over medium heat. Add patties; cook 6 to 8 minutes or until golden and heated through, turning once and adding additional oil, if needed, for even browning.

  4. Serve hearts of palm cakes over mixed greens with Remoulade Sauce and, if desired, lemon wedges.

Remoulade Sauce

  1. Place the tofu in the bowl of a food processor. Cover and process until smooth. Add the remaining ingredients. Cover and process until just combined. Season to taste with salt and pepper.
