Gluten-Free Pumpkin Bars with Chocolate Chips

It's amazing what you can do with a can of pumpkin! With just that plus a handful of other ingredients you probably already have in your kitchen, you can have a pan of moist, chocolate-chip studded bars ready in no time. But these aren't just any pumpkin bar, these are a bit healthier than most. With less sugar, zero added fat and wholesome ingredients, you can feel great about serving these to your family for snack or dessert all season long!

Ingredients

  • 2 cup Gluten-Free Flour Mix

  • ½ cup sugar

  • 2 teaspoon ground cinnamon

  • 1 teaspoon baking soda

  • ½ teaspoon ground ginger

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground allspice

  • ½ teaspoon salt

  • 15 ounce can pumpkin puree

  • 1 large egg

  • 1 tablespoon vanilla extract

  • 1 teaspoon apple cider vinegar

  • ½ cup mini chocolate chips

Gluten Free Flour Mix

  • 3 cup white rice flour

  • 3 cup potato starch

  • 2 cup sorghum flour

  • 4 teaspoon xanthan gum

Directions

  1. Preheat your oven to 350F and lightly grease a rectangular baking pan (either 9 x 13-inch or 11 x 7-inch for slightly thicker bars).

  2. In a mixing bowl, whisk dry ingredients together, then add remaining ingredients except chocolate chips. Stir to combine until no dry ingredients are visible.

  3. Fold in chocolate chips, spread batter in prepared pan and bake 20 minutes (or 25 minutes for smaller size pan). Remove from oven and cool almost completely before slicing into squares.

Gluten Free Flour Mix

  1. In a large airtight container whisk together rice flour, potato starch, sorghum flour, and xanthan gum. Cover and store at room temperature for up to 3 months.
